Production technology
The chardonnay grape cultivated on these steep hills produces a sparkling wine via a process of refermentation in tanks (Charmat Method). The grape harvest, which normally takes place in mid September, yields a basic wine through temperature controlled fermentation. The wine base is then sugared and yeast is added for the refermentation (Secondary Fermentation) phase in the early days of the vintage year. This key phase lasts 15 days at a temperature between 17° and 18° C. Then the product, now sparkling wine, is left in the tank to mellow on the fermentation lees
Tasting notes
The visual aspect shows a creamy wine with a fine foam and a persistent perlage; its bright straw-yellow colour preceding a marked and delicate aroma. It enjoys an intense, deep and harmonious taste. It is without doubt a brut with its own character and a winning nature and one which retains the noble and generous personality of its original vine
Gastronomic matches
Served at a temperature of 10°-12° C it is excellent as an aperitif, with fish or preferably fresh cheeses. We suggest trying it with a warm hors d’oeuvre of vegetables and puffy pastry.
