Winemaking
In the months before the harvest, clusters are selected carefully and are harvested when the phenolic ripeness is at its best. This wine goes through the single-vineyard vinification, temperature-controlled fermentation with a long skin contact maceration that lasts 20-30 days, sometimes with submerged cap. Malolactic fermentation takes place in stainless steel and concrete tanks. The wine ages in big Slavonian oak barrels and French oak tonneaux for 24-30 months. Bottling is carried out in the summer and the wine is also aged in bottle before being released
