Winemaking
Crushing-destemming is followed by spontaneous alcoholic fermentation using indigenous yeasts. It is left in contact with the skins in stainless steel tanks at a controlled temperature, max 30-31° C (86-88° F), for 23 days. Dry racking follows, with transfer to oak barrels of 35 hectoliters
Malolactic fermentation
Carried out entirely in barrels immediately after alcoholic fermentation
Aging
In barrels for 9 months, followed by assemblage in stainless steel, filtration, and bottling, done in September 2015. Rests in the bottle at a constant temperature of 14° C (57° F) for two months before release

Tasting notes
It always reflects the rich expressiveness arising from the Barolo’s lands. It was even the same for 2014 vintage, where the tannins claim accurately and promptly to the palate, enlivened by a fairly strong acidity. At the nose is elegant, not too intense in red fruits and flowers, including violet, but hints of herbs and rosemary are not missing , donating persuasiveness to the wine
